strawberry-rhubarb-honey-jam

From the RJ Honey Farm kitchen comes another delicious recipe from Hannah.

This is delicious on English muffins.

Strawberry-rhubarb Jam 

2 c crushed strawberries
2 c chopped rhubarb
4 T honey
1 T lemon juice
3 T pectin

Combine all ingredients in a saucepan, simmer on medium-low about 10 min till rhubarb has softened.  Turn heat to medium and bring to a rolling boil, while stirring for about 5 minutes.  Let cool till warm, then fill jars with jam.  When cooled down to room temperature, store in freezer or in refrigerator.
